It is a matter of taste. Roasting gives taste and is the only real cooking that coffee needs. The brewing or the infusion, the "making", is the secondary and ultimate process just before drinking; it is only for extraction, for a comparatively short time, with water that is hot but a little less than boiling, so as to "re-cook" as little as possible, or the brew will be bitter. Good Artisan Roasting, then prepares the coffee beans for grinding, which is followed by the last work of brewing the fragrant drink. The effects of roasting selected green coffee beans are to develop and release the aroma and flavours so characteristic of those coffee types chosen by the Artisan Master Roaster.
